This recipe came from a recipe for chicken that I was considering a redo on. I usually make up a weekly set of menus and then do my shopping but pork loins were on sale for $.99 a pound and what could I do. I buy the loin whole(4 lbs) and then cut it up and freeze per recipes I want to use it on latter. Today it was this recipe (2lbs) cut into 1″ chops and then a small 2 lb piece for roasted pork and vegetables. Sometimes they get cut up in pork medallions that get used for stir fry or on the grill. Everyone loves a bargain and then when the finished product tastes great BONUS.
I also wanted to make this a keto friendly version since we have been cheating too much and need to clean up our acts. But I did add more fresh green beans so this to help with filling us up. Not to mention that green beans are my favorite vegie so it is a worth-while splurge . But you can use mushrooms and probably any color vegetable so it looks pretty as well.
This is a quick recipe as well maybe took 30 minutes in total. So it is a good weekday meal go for it. Oh and you could use chicken if you like.
Pork Chops and Green Beans in Garlic Sauce
Ingredients
- 2 lbs Pork Chops 1" thick
- 1 lb Green beans trimmed and blanched
- 4 cloves Garlic minced
- 4 tbsp Unsalted butter
- 1 cup Chicken bone broth or Chicken stock
- 2 tbsp Lemon juice
- 2 tsp Cornstarch
- 1 tbsp oil for frying
- 1 recipe of seasoning
Seasoning
- 1 tsp Smoked Paprika
- ½ tsp Salt
- ¼ tsp Black pepper
- ¼ tsp Italian Seasoning or Dried Parsley
- ½ tsp Crushed Red Pepper Flakes
Instructions
- Combine all seasoning ingredients and set aside
- Heat oil in skillet over medium-heat. Sprinkle each chop with seasoning mix. Brown chops 7 minutes ; turn and cook for an additional 4 minutes. Until a pretty brown. Remove to plate and tent with foil.
- Melt butter in same skillet; add minced garlic and cook 1 minute.
- Stir cornstarch into lemon juice. Add to warmed bone broth and any remaining seasoning mix. Pour into skillet whisking to combine without lumping..
- Simmer until thickened.
- Add green beans and cooked pork chops back to skillet.
- Cook until heated thru and then serve.
