For years I have been making eggplant parmesan the normal casserole way. And using your tried and true breading method.A-P flour, egg, seasoned bread crumbs. Plus it seemed to me to take for ever. And then there was light! awwww
We were at a cute little bar/restaurant near us and they do their eggplant in stacks. Yes in stacks. This is a great idea for smaller portions and it stays fresh. Went straight to the grocery and purchased a small eggplant that I can cut in coins and away we went with this idea and just love it. It is fast, keto friendly, isn’t soggy and not a ton of leftovers.
The amount of ingredients needed are based entirely on the amount of eggplants you are using. I used a small to medium sized one so that my eggplant coins were about 2 inches across so I will give you the amounts that I used, but we all know it takes what it takes when breading anything. But it cannot be much easier than this and that works for me.
In a search for more keto friendly everything, we found this jarred red sauce that is no sugar added that Ragu makes. ‘Simply’ is the name and comes in a few different variations. I have never been a fan of Ragu to be honest (always bought from the little Italian deli near our previous home) but this is good and I mean even my husband remarked that it was tasty. Bonus! I now keep 2 or 3 on hand.
My new weapon in breading is first coconut flour, then egg and then tadahhhh crushed pork rinds. Yes the old Atkins snack that we all tolerated back in the day. Now I crush them ( even the flavored ones) and use them in place of panko or bread crumbs. You will find this as breading on my Lemon Chicken Romano and anything else that I bread. Cheap and keto, Atkins friendly.
Eggplant Parm Keto Friendly Redo
Ingredients
- 1 Medium Eggplant sliced 1/2 " thick
- 1/2 cup Coconut or almond flour more as needed
- 2 Eggs beaten
- 1/2 cup Finely crushed pork rinds
- coconut oil spray
- Ragu Simply No Sugar added red sauce
- Mozzarella grated
Instructions
- Set up dredging station: in separate bowls: flour of choice, beaten eggs, crushed pork rinds.
- Proceed in that order to coat each eggplant coin. Place on baking sheet pan that has been sprayed with oil.
- Baked 10-17 minutes at 350. Turning once until browned.
- Top with grated cheese and bake until melty.
- Service with a spoon of red sauce and more cheese as desired.
