These nuts are addictive. Whether you use pecans or walnuts or a mixture they will be gone before you know it!
We have used these as a grab and go snacks and also on pretty much any dessert that screams for an ‘extra’.
Being stuck in the house for this long has moved my brain ( and snacking taste buds) into holiday mode. Holiday mode meaning snacking and also sharing. These make great gifts. Either way be sure to store in tight fitting containers. This is most important in the South where it is humid all of the time it seems. For this past holiday I gave/stored in parchment lined tins. That was not tight enough. This week or this giving season I will store and give in zip closing bags ( holiday appropriate of course straight from the dollar store) then put in tins, or clamp type jars. I am hoping to also find maybe small mason jars or other containers at the Goodwill and thrift stores. These make receiving a but more special.
Back to the recipe. This is so easy and versatile that you will be able to make as often as you might like. Sometimes I buy a bag of nuts and then forget they are in the pantry so it turns into a do or die situation. You’ve been there. Look in the freezer and it turns into what the heck am I going to do with this or that before it hits the garbage. I am sure this was the birth of stew and soup. Again, back to the recipe. Nuts are too expensive to have to toss and I know they can be frozen. But I forget that as well. I always buy things that I am sure I will use this week or next and then I get distracted by some other shiny object ( meaning a new recipe that I just have to have NOW). This is my cat mentality.
So give it try. Oh I forgot… you can be creative with the amount of cayenne. The amount listed just give a tingle but you can add more if you like extra tingle.

Candied Pecans
Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 Tbl ground cinnamon
- 2 tsp salt
- 1/2 tsp ground cayenne pepper or more if you like more tingle
- 16 oz pecans halves unsalted or walnuts or mixed nuts.
- 2 egg whites whisked
Instructions
- Preheat oven to 300
- Add sugars, cinnamon , salt and cayenne to heavy bowl or zip top bag. Toss or whisk until well combined. Set aside
- In separate bowl combine nuts and whisked egg white. Gently toss or to coat well.
- Add in sugar mixture and again toss until well coated.
- Spread mixture onto parchment lined sheet plan in a single layer.
- Bake 40 minutes stirring at 20 minutes.
- Remove from oven and let cool on sheet pan until the nuts reach room temp.
- Transfer to sealed container.
