Okay. It is CRAB SOUP. or SHE CRAB SOUP. Maybe even Maryland Crab Soup. Not Crab bisque not any other variation there of.
Fell in love with this soup while in Everglade City, FL on a road trip. What a charming place. You know did the usual Everglade Airboat trip and then it was time to look around for dinner. It is a very small, not so fancy town. What a surprise to find so much great food!
I am all about any seafood, lobster or crab bisque. But this soup was unexpected and fabulous. Flavor power personified. It was so good that I remember the crab soup and a fantastic cucumber salad but have no recollection of an entree! Not that is was bad, it is that the soup and salad were so good! I have been searching in restaurants and on line for some time now and nothing..then the sky opened and I found a recipe sort of like what I remembered. I was off and running. Crab meat was on sale so it was an omen that we should go with it.ow
Apparently this is a well loved item in the Chesapeake area and therefore everyone has their ‘mine is the best’ version. I love that when people are so attached to a recipe (like I really know even those I have not tasted every eggroll ever made, I make the best mini egg rolls and don’t forget my world famous sauerkraut balls). My recipe is my favorite as of today. Now that could change if you send me your most favorite version.
Crab Soup
Ingredients
- 28 oz whole San Marzano tomatoes-squeezed
- 2 14oz Mixed frozen vegetables corn, carrots, lima beans, green beans-any variety
- 2 Tble chopped onion
- 1-2 Tble Old Bay Seasoning I used low sodium. Add alittle at a time to taste
- 3-4 Cups Beef Bone Broth start with 3 cups add more to thin
- 2 Medium potatoes boiled or microwaved and cubed
- 1 Lb crab meat
Instructions
- Saute onion a minute or 2 while squeezing and just breaking up the tomatoes.
- Add tomatoes, beef bone broth, vegetables and Old Bay Seasoning. Simmer for 5 minutes.
- Taste and adjust seasoning. Add more Old Bay alittle at a time.
- Add potatoes and gently add crab meat. Add more bone broth or water as needed to thin out. Simmer 10 minutes and readjust Old Bay Seasoning as potatoes do not have much taste and they need alot of seasoning.
- Heat thru. You can serve when hot or let simmer or sit until ready to serve.
- This tastes great when reheated but may need additional water to thin.
