Okay, somehow it got to Labor Day and I haven’t posted one of our favorite cold, summer salads. Great for picnics – cannot give someone one of those illnesses that kill people. NO MAYO.

It is one of those recipes that gives you the opportunity to practice those knife skills or break out the mandolin that seemed like such a good idea when you snagged it at TJ Maxx. Also, clears our the vegetable bin from left over cucumbers and onions from the farmers markets.
Super easy and trust me it looks better in person then it does in the picture. Refreshing and vegie lover approved. Most definitely up there with our cauliflower and broccoli salad with fresh made sweet and sour dressing for a picnic or an office potluck ( which is where I got this honey). Both of these are coming soon because I forgot to take a photo when I made them for the 4th.
Cucumber Salad
Ingredients
- 2 Large Cucumbers thinly sliced
- 1 Large Sweet Onion thinly sliced
- 1 Cup Sour Cream
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 Tbl Dill Weed
- 1/4 Cup Apple Cider Vinegar
- 1/4 Cup Sugar
Instructions
- Place cukes and onion slices in a bowl. In another bowl whisk together remaining ingredients. Pour over cuke and onion slices. Being sure to coat well. Refrigerate . Best if served as soon as chilled.
