New most favorite recipe! And versatile as well!
I have been hearing about this thing called egg roll in a bowl for a short time now and was curious. You see I am the person that looks( and eats) at just about all recipes as a potential mini egg roll for entertaining. Something that can be made ahead and frozen. Something that can feed a few or a herd. Something that once made and frozen can be popped in the oven on a minutes notice. Add a dipping sauce and there you go knock your socks off good.
So, anyway, I then moved to my “I have a great egg roll recipe” in my faithful Asian cookbook that must be, just guessing here, 40 years old. We used to host Chinese New Years dinner parties each year so that thing had been with me for a long, long time. You know that one that has all of the ingredient stains and notes in the margins. All though I must confess, back then I made the wrappers from a handy dandy crepe maker now I purchase all of my wrappers ( both egg roll and won ton). Am I getting lazy or are commercial wrappers getting better? Probably a touch of both.
The great thing about egg rolls, and now this recipe, is that they are really, really easy. The fillings are fast, easy, flexible and usually inexpensive. So go for it. Use my suggestions or just use the basic recipe of crunchy and tasty as your guide.
Egg Roll in a Bowl
Ingredients
- 1 Pound Breakfast sausage
- 2 tsp Minced, grated or pressed garlic
- 1 pkg Broccoli Slaw mix
- 1/4 cup Soy Sauce preferably low sodium
- 1 1/2 tsp Fresh minced ginger
- 1 Tbl Sriracha
- 1 Whole egg
- 1 Bunch Green onion-sliced
- Drizzle of sesame oil optional
Instructions
- In a large skillet, cook sausage until no longer pink. Drain if necessary.
- Add garlic and saute for 30 seconds.
- Add slaw , ginger, soy sauce. Stir fry gently until heated thru but slaw is not soft and soggy. A few minutes tops. Add water if it is too dry.
- Push slaw mix to the side and add the egg. Scramble until cooked and combined into slaw/ sausage mixture,
- Stir in half of the sriracha and combine into mixture. TASTE. If not spice enough add more sriracha. You can always add more at the table.
- Sprinkle with green onions and drizzle with a little sesame oil. Again..TASTE adding more sriracha or soy or sesame oil.
