Football games, holidays or just plain get togethers are better with tasty bites that everyone loves and that do not involve your standard goodies. This is easy ( I mean 2 ingredients) it is hard to believe. Ok I lied – it is three ingredients I forgot the mustard for dipping.
As always the rule is the fewer ingredients the better the quality needs to be. It is like some of our singing. My mistakes will be lost in the crowd but you do not want to hear me solo. Now that does not always mean cheaper is bad. If you are a wine drinker use a chardonnay that you would drink otherwise just ask in the store for a brand that is in the medium price range. But if you like the Aldi chardonnay go for it. Same with the Italian sausage. Doesn’t have to be expensive butcher store kind. I got mine from the grocery but would get something from Costco or Sam’s when I am making up a large batch.
Now to the mustard. I have used a recipe of Joe’s Crab Shack mustard sauce or a slightly doctored up whole grain and all seem to be just fine. Never got a complaint with any of them.
Since it is only italian sausage and chardonnay wine you can flex out the amounts. I usual make 1 package of sausage ( 16 oz) and then just white wine to easily cover the sausage bites. Easy peasy for sure.

Italian Sausage in Chardonnay
Ingredients
- 5 lb Italian sausage sweet or mild
- 1 Bottle Chardonnay
- Mustard for Dipping
Instructions
- Cut each sausage link into 4 pieces
- Place in oven proof and cover with white wine
- Cover and bring to a boil.
- Once boiling reduce heat to medium-low and simmer for 40 minutes or until fully cooked, stirring occasionally
- Once cooked thru spoon onto a rimmed sheet pan lined with foil. You can broil or 2-3 minutes or pop into oven at 400° until browned and maybe even a bit crunchy on the ends.
- Remove to serving dish , allowing to cool slightly. Serve with mustard dipping sauce
